mmmm….Planked Salmon with Pesto Crust

…and grilled veggies was last night’s dinner. John (one day he’ll have a new bio, I’m sure :-) ) says I should share the source of the recipe, so here it is. I had a hard time choosing between “Mike’s Pesto Planked Salmon” and “Big John’s Planked Salmon with Feta Cheese Crust”. Went with the pesto but put minced fresh red onions on top instead of the onion flakes. Even Alex, who’s not a salmon fan, ate some.

The veggies took on the cedar smoked flavor, too: plum tomatoes, zucchini, red onion slices, red and green pepper chunks brushed with olive oil and grilled while the salmon was smoking.

Now I’m off to the grill store for more planks.
